Birthday party for a nineteen year old
There are not a lot of nineteen year olds that can claim to have changed the world. Not in the Joan of Arc epic kind of way but in the making a difference in your community kind of way. C'est What and it's loyal customers can lay claim to that kind status. Before we throw out an arm slapping ourselves on the back let us explain by using some examples:
Craft Brewed Beer. There are now over thirty craft brewers in Ontario and dozens of friendly purveyors of their products in Toronto. When we started out there were a handful of brewers and not a single micro-friendly pub.
VQA Wine. When our local vintners formed the VQA, there was an entire generation of wine drinkers who wouldn't touch anything but French wines. We were the first establishment to embrace Niagara wineries by serving their products exclusively. Now the most exclusive and expensive restaurants in Toronto all serve VQA wines.
Food. In 1988 pub food was almost exclusively burgers, wings, and nachos. While there are still more than few of those kind of places around there many notable places that have followed C'est What's lead to offer great meals inspired by our multi-cultural city.
Music. We have always supported local musical talent. This is not an effort that would be considered on any corporate business plan but has a value that far exceeds the bottom line. Thousands of performers have been treated with respect and been given a professional helping hand while showcasing their talents here. More than a few have turned into international success stories, but the best news is that the local music scene is thriving.
Major cultural contributions or just one big string of coincidences? We'll let others pass the judgement but we'll make the claim.

The Highlanders
On Wednesday January 24, 2007 we used Robbie Burns Day as excuse to sample seven of the more obscure highland single malts.
Unusually, there was a great deal of consensus on the three best whiskies of the tasting. Edradour 10 yr. was a clear favourite with a median score of 22 out of 30. Second place finisher Balblair 10 yr. was the best value at about $50 a bottle - almost $30 cheaper than the Edradour. All four Speysiders ended up at the bottom of the table.

Winter Warmers Beer Tasting
Now that winter has finally arrived in these parts, we are checking our anti-freeze levels. It is a perfect opportunity to enjoy beer with a little more substance, flavour, and alcohol than you would dream about in the dog days of summer. So, bartowel.com and C'est What are presenting a special tasting of eight to ten brews guaranteed to bring warmth and comfort.
To make this tasting a little more interesting, it will be conducted "blind". The products names will not be revealed until the score sheets are collected.
Afterwards a draw from among those that have submitted their scores will be held to award a "pool party" to a lucky beer lover and eleven of their best friends. The prize will include two hours of pool at two tables as well as appetizers for all. As a bonus to those who think they know what they are doing we will make an additional entry in the draw for each correct guess at the name of each sample.
The tasting will take place on Wednesday February 21 at 7 p.m. Tickets are available in advance for $15.00 (all taxes and charges included) online.

Beer List Changes
New to our draught beer list are: Eisbock (Niagara Brewing) and Great Eastern Pale Ale (Ste. André). During the coming weeks we expect to see Black Oak Double Chocolate Cherry Stout (our first shipment will include a casked version, the remainder will be filtered and kegged), a cask of Durham's Black Kat Porter, and the casked version of F&M's Stonehammer Dark.
We have re-formulated our Mild Brown Ale so that it has a more traditional alcohol level (3.4%) while retaining it's full roasted flavour. Click here to view the entire draught line-up.

Those with day jobs may be reluctant to check out a show during the week. Not to fear, here at C'est What shows start within fifteen minutes of their advertised time, and most weekday shows wrap up by 11:30. Enjoy!

Unfinished Sympathy is the fourth solo album by the veteran Toronto singer/songwriter, Scott B. After recording and touring with a set backing line up for his previous album, Long Way Down, Scott B returned to an all star backing band. Helping out producer David Baxter (Bob Snider, and the new Big Rude Jake Album) on guitars is long-time Sympathy member, Gary Robertson and along with a top-rated rhythm section consisting of Blue Rodeo's Bazil Donovan and ex-Prairie Oyster drummer Michelle Josef, forming the bedrock on which Scott B's plaintive songs of personal social upheaval are grafted. Along with the vocal support of Oh Susanna, Cindy Church, and Vaughn Passmore, and instrumental cameos from Ashley MacIsaac on fiddle and jazz raconteur Tyler Yarema on keyboards, the well-produced result is unquestionably the strongest album of material by this highly respected Toronto-based musician to date.

As we reach the age of majority we're marking the occasion by officially launching whatsnext.ca site with a party befitting a nineteen year old.
We've never been comfortable being pigeon-holed, and have always approached things a little differently. This has served us well over the years with our strengths firmly rooted in our diversity. For almost two decades C'est What has been a supportive force on the local scene through its ongoing commitment to independent music and culture.
The word of this era is streaming and we are on the leading edge. The What's Next site comes complete with streaming radio featuring an indie-centric play list of recorded and live performances and a community forum/chat to help keep you in the loop of all things cultural.
Oh yeah, about the party... our dear friend Royal Wood drops by to play with an all-star line-up of guests.
Fresh on the heels of his latest release "A Good Enough Day" (now in stores), Royal will no doubt make us all swoon with his smooth, choirboy voice and uber melodic tunes... if not familiar, do yourself a favour and check him out! And yes, for those that can't make it down to see the show in person, the show will be streamed online.
